Ingredients
½ head red cabbage, finely chopped
½ head green cabbage, finely chopped
1 carrot, cut into thin strips
1 bunch scallions chopped
¼ cup fresh cilantro, chopped
¼ cup vegetable oil
1/8 cup rice wine vinegar
¼ cup vegetable oil
1 tablespoon mayonnaise
1 teaspoon sea salt
Pepper to taste
¼ cup crushed dry roasted peanuts
Directions
Mix together cabbage, scallions, carrot and cilantro in a bowl. Combine vegetable oil, rice wine vinegar, mayonnaise, sea salt and pepper. Mix into the cabbage mixture. Sprinkle peanuts on just before serving.

Hi Alison,
You and i are the same. Whenever i go away on vacation i always think of the food that i will eat. I just came back from a biking trip from Provence, i was blown away with all the food that i had. My expectations were so far below that i was so surprised that i liked everything i had. I also did 2 trips to Italy for a cooking tour that i cannot forget. Plus the nice people that i met who have the same love for food like i do is always fun and lots of memories to cherish. Enjoy your vacation.
