These low fat biscotti, made without butter or oil, are a guiltless treat. Make them with a friend for sweet Valentine’s Day gifts. A quick dip in chocolate adds the finishing touch to the biscotti. Use a good semi-sweet chocolate for a nice compliment to the subtle orange flavor.

Ingredients
4 eggs
½ teaspoon orange extract
1 teaspoon vanilla extract
2 teaspoon fresh orange zest
¾ cup white sugar
2 ½ cups white flour
½ tsp. baking powder
¼ teaspoon baking soda
¼ teaspoon salt
1/8 cup orange juice
½ cup mini semi-sweet chocolate chips
4 oz. semi-sweet chocolate such as Ghirardelli (for the dipping sauce)
Directions
Pre-heat the oven to 350 degrees. In a large mixing bowl, whisk 3 of the 4 eggs. Add orange extract, vanilla extract and orange zest and stir well. Mix in sugar, flour, baking soda, salt, baking powder. Add orange juice to soften dough a bit. Mix ingredients together with hands until the dough begins to gather. Crack last egg and mix into the dough until moist. Mix in mini chips but don’t over work the dough.
On a floured surface, make two logs approximately 12 inches long, by 2 inches wide and ¾ inch thick. Transfer to a cookie sheet sprayed with baking spray, leaving room between the two logs.
Bake for about 25 minutes until golden. Remove from oven and reduce the temperature to 325 degrees. Cool the logs for about 5 — 10 minutes.
Use a very sharp knife to cut the logs on a diagonal into about 44 pieces. Place on a baking sheet and bake for another 10 – 15 minutes, flipping them once. Remove and cool.
If you want to dip the biscotti in chocolate, heat chocolate in the microwave on a reduced heat setting for two minutes mixing every 30 minutes until melted. Dip one end of each biscotti into the chocolate. Set onto parchment paper. Cool until chocolate hardens and keep in an airtight container or package for friends.
