Among my group of friends, when someone has a new baby, breaks a bone or needs a major jolt of help, we call in the “sunshine committee.” Here’s the idea: Even when your life is in turmoil, you have to eat. People sign up for certain nights to deliver a home-cooked meal to the person in need.
Every time I think of the sunshine committee concept, I remember the day I went on a three-month bedrest with my second baby, and my friend Margaret came over with bags of food for our family. She didn’t ask if there was something she could do; she just did it. Then she and my friend Karissa, who didn’t even know each other, plotted an elaborate plan to feed me, my husband, my 2-year-old, and my mother, who was taking care of us all, for the next few months. Women all over Washington, D.C. were bringing us food every day.
Last week, our friend Christine activated the sunshine committee for another friend whose baby has been very sick and whose husband had surgery on top of it all. My turn to make dinner (And I’ll grab another friend to cook with me) is next week. I have a rotation of chicken pot pie, lasagna, chicken caccitore, chicken pot pie, lasagna, chicken caccitore that I tend to bring friends in need. But this time I’d like to try something new, so let me know if you have any ideas. And if you have a friend in need of a little help, bring her some dinner.

I’ve made meals for several sunshine committees. The last time I volunteered I wanted to come up with something different but still healthy and simple. I found a recipe for “salmon en papillote” (which is salmon and other goodies wrapped in parchment paper so that it steams in the oven.) This recipe called for a bed of sliced potatoes, layers of spinach, a fillet of salmon topped with a yummy caper butter and sliced lemons. It was easy to assemble, easy to bake, and a beautiful present to unwrap when done. I highly recommend it!

I’m a big fan of a chicken parm hero-or-not kit. You can pack the chicken cutlets, bread, mozzarella and sauce separately and bring some pasta too. Then everyone can their own masterpiece.

Sorry, make that: Then everyone can build their own masterpiece.

Hi Evelyn..I love “salmon en papilloteâ€!!!
It’s one of my favorite….
anyway……
My grandmother is also an avid lover of canned salmon recipes. She cooks really delicious salmon dishes. She eats one can each day. All I can say is her skin is quite smooth for a 75 years old lady and her 140 mmHg blood pressure is great for someone of her age.
A truly delicious and healthy food indeed…….
