Saturday night, I had the great pleasure of dinner with my husband at Potager, my favorite restaurant in Denver. The name means “kitchen garden” in French and our meals were an incredible taste of spring in Colorado, all local, all seasonal. On our menu that evening: Spinach Soup with Nettles, Colorado Lamb with Spring Peas, Halibut with Morels and a Strawberry Rhubarb Crisp. It tasted like we plucked it all out of our backyard that night, only better. It gave us such hope for meals to come this spring.
Also putting me in a very “locavore” mood this week, I just finished reading the inaugural issue of Edible Front Range, “Celebrating local Colorado food, farms and cuisine, season by season.” It’s a gorgeous quarterly magazine, one of about 50 in the “Edible” family which includes Edible Lowcountry, Edible Jersey, Edible Boston and Edible Santa Fe.
