While shopping in my local grocery store the morning of May 4th, the neat rows of tomatillos, plum tomatoes, avocadoes and limes were just too much to walk past — a sure testament to in-store merchandising! And, since I’ll grab any opportunity to make dinner a fun event in my house, I loaded my cart with everything to add a Latino spin to my next two cooking dates. Always eager to try something new, there was no question that Kathe and Suzy would be on board with this impromptu menu.
So, at my first cooking date with Kathe, we threw garlic, lime, cilantro, roasted tomatoes, tomatillos and onions into the food processor, gave it a whir and had two kinds of fresh and delicious salsa. The next day, Cinco de Mayo, Suzy and I spent a couple of hours making beef burritos and shredded chicken Taquitos to fill our freezers. We used Queso fresco, a mild and creamy Mexican cheese, which added a nice authentic touch.
My kids enjoyed their sampling of Latino foods the evening of May 5th, as I sat back and enjoyed their favorable comments. As they scarfed down their food, I marveled at how easy this meal was to create. Several hours having fun with two friends on two different days and then only a few minutes to re-heat dinner! The only thing left to do — clean up their mess!

Looks delicious Alison! makes me want to makes some, but would rather have someone else cook them for me or go out to one of my favorite Mexican Restaurants in Conroe, Texas: El Bosque or Margarita’s and Peppers. 🙂
