My first week back to reality and my husband is already complaining that our refrigerator is stuffed. To him it looks crowded. To me it’s just right. With my stackable containers filled with summer salads — corn, lentil, bean — (ok, maybe they aren’t stacked neatly the way they should be), I open the doors of my jam packed fridge and feel content. It’s a sign that I’ve had a good week of cooking, most of which was done with friends.
I missed my friends so much that I had to see everyone. So, I managed to squeeze a bunch of impromptu cooking dates into our hectic schedule. There was no time to simply hang out and chit chat, otherwise my fridge would be filled for sure (my husband is right about that!), but with raw ingredients and not finished products. In my opinion, my loving husband should take my filled fridge as a sign that his wife has had a good week. (It’s an empty fridge that should make him nervous.)
This week, I will begin to fill my freezer in the same way with pesto, sauces and soups. Watch out hubby, you may see me jump for joy.
