We’re on our fifth of the past week and have many more on the horizon, so it officially feels like summer–the days of picnics and potlucks. As fun as they sound, they can also be stressful–what to bring? Will there be too much of something or not enough of another? If you have a big crowd, I recommend doing a simple Google sign-up sheet asking for main dishes, sides & salads, beverages and desserts. We did this recently for a group of twelve kids and about that many adults and it worked perfectly–from the gorgeous salads to the Rhubarb Cobbler dessert. I love rhubarb this time of year! I brought the Mango Jicama Salad (see our home page for the recipe).
Another way to make it easier on everyone is to get together with a friend–even one who has a different event to go to–to make big batches of salads, sides and main dishes together. For a smaller gathering last week, I loved co-making and bringing homemade hummus to share for a wine and cheese party. Tonight, I’ll be making homemade mac and cheese with my kids to bring to a end of the school year potluck. What are your favorite dishes to bring to picnics and potlucks?
