It’s that time of year again. A time to say thanks to the teachers who spent time teaching and caring for our kids all year long. In our town, we have toasts for our teachers, where parents throw parties to show their appreciation. Often times, the focus of the event is the food — there are BBQ’s, cocktail nibbles or simply ice cream. Finding the time to make homemade food can be challenging at this time of year, but the cost to cater the event leaves many people stressed. That’s why I chose to cook and freeze food with my friend Kathe ahead of time for my daughter’s fifth grade teacher toast. We carved out a three hour time slot and powered through our agenda which included mini spring rolls, cheese puffs, pork meatballs, two bite quiches and empanadas. It was an intense time cooking and freezing our food, but we got it done. Plus, we had some quality friend time, which is rare at this hectic time of year. I suggest you and your friends get together to cater your events for a more delicious and economical way to entertain.
