If you’re looking for a light, flavorful meal for a weeknight dinner, try these Asian lettuce wraps. You can even serve them in small lettuce cups as an appetizer. Make the filling ahead of time (with a friend of course) and simply reheat for a make-your-own lettuce wrap dinner.

Ingredients
2 pounds ground chicken
2 teaspoons dark sesame oil
1 tablespoon canola oil
3 large garlic cloves, minced
2 teaspoons ginger
1 onion, diced
3 scallions, washed and chopped
1 yellow pepper, diced
1 small red pepper, diced
1 jalapeno pepper, seeded and minced
2 tablespoons soy sauce
¼ cup good quality hoisin sauce
Salt and pepper to taste
1 small can diced water chestnuts
¼ cup tablespoons washed and chopped cilantro
3 carrots, shredded
4 radishes, julienned
3 additional scallions, washed and chopped
1 large wedge of iceberg lettuce, washed, stem removed and leaves separated
Directions
In a large skillet, heat the oils and add the garlic and ginger and sauté for a quick minute, stirring with a wooden spoon. Add the ground chicken and cook, breaking it apart, until mostly done. Add the onions, scallions and peppers. Cook for a few minutes longer. Add the soy sauce, hoisin sauce and water chestnuts. Cook for several more minutes until the flavors have a chance to combine. Total cooking time is about 20 minutes. Remove from heat.
To serve, set out the lettuce, carrots, radishes and scallions on a platter next to the meat. Allow everyone to make their own lettuce wrap by spooning filling and various toppings onto a piece of lettuce.
