If you love the tartness of fresh whole cranberries, you’ll love this bread. Make several loaves ahead of time and freeze for the holidays and serve as a side with your festive meal or for breakfast to overnight guests. You can also give the bread as gifts to neighbors and friends.

Ingredients
1 stick butter, softened
1 cup sugar
1 teaspoon vanilla extract
2 eggs
1 teaspoon lemon zest
1 teaspoon orange zest
1 ¾ cups flour
2 teaspoons baking powder
1 teaspoon baking soda
½ cup buttermilk
2 cups chopped cranberries
Directions
Pre-heat the oven to 350 degrees and prepare a loaf pan (or mini loaf pan) by spraying with baking spray. Beat butter, sugar and vanilla until creamy. Add the eggs and zest. Beat well. In another bowl, whisk the flour, baking powder and salt together. Add to the wet ingredients and beat alternatively with the buttermilk. Stir in the cranberries.
Bake in the oven until the center comes out clean for approximately 30 minutes. Cool completely and serve or freeze by wrapping well in aluminum foil and then placing the bread in a freezer bag.
