We were on a mission, or at least I was and Jackie was along for the crazy ride. We set out to make two batches of chocolate chip cookies and several dozen assorted muffins — plus a nice salad for lunch — in one compact kitchen. Two cooks and one visiting friend crowded the kitchen as we whisked, beat, rolled and gabbed away about life. There was no stopping us as bowls, mixers and baking tools packed Jackie’s countertops, rubbing elbows as flour spilled amongst buzzing timers. It was a hilarious time baking together (Or at least I thought it was) as we worked side by side blending various chips into our assorted batch of muffins and scooping batter. Cookie sheets balanced upon pots and precariously hung off the edge of the countertops as we utilized every inch of Jackie’s kitchen.
Jenn, who popped in for a visit and a bite for lunch, couldn’t believe the action and nearly laughed the whole time. She teased that Jackie and I didn’t need our cardio work out for the day for it was apparent that we were sweating and burning our daily calories. But the storm calmed and as the last batch of cinnamon muffins cast their aromatic spell, we collapsed into chairs and savored a civilized lunch — three tired, hungry yet satisfied friends. I only have a few mementos stashed in my freezer to show for that baking date, my three children savored the rest during breakfast and afterschool treats, which means we’ll have to jump right back on the baking treadmill and start laughing and sweating again. I can’t wait!
As for the cookies, we made a good old fashioned Nestle toll house chocolate chip. And for the muffins we made a double batch of one simple batter but mixed in mini chocolate chips, King Arthur maple flavor bites and cinnamon chips.
