“Oh my goodness” are the words that came out of my ten year old’s mouth as he sampled the doce de leite macaroons. And I thought the coconut lime ones were the winner! So, forgive me for another macaroon posting but my kids nearly ate every last one and told me I had to share the recipe with you!
The inspiration for these chewy coconut morsels of goodness came from a jar of doce de leite sitting in the fridge staring me in the face. Since my macaroons are made with sweetened condensed milk anyway, I figured using doce de leite (or dulce de leche!) was a natural. And it seems my caramel colored coconut concoctions (say that three times!) thought so too.
With only five ingredients, these delightful chewy cookies are simple to make. But you might want to double the recipe if your family is anything like mine! Enjoy.

"Oh my goodness! "Is what my ten year old says when he takes a bite of these "creamy, chewy coconut" delights. Many macaroons are made with sweetened condensed milk, so these just take that ingredient one more step to doce de leite (or dulce de leche).

- 8 ounces coconut sweetened
- 1/2 cup doce de leite (plus extra for drizzling
- 2 egg whites beaten stiffly
- 1 tsp vanilla extract
- 1/2 teaspoon salt sea salt or kosher
- Pre-heat the oven to 350 degrees and lay parchment paper on two baking sheets.
- Beat two egg whites until stiff.
- In a medium sized bowl, mix the coconut, doce de leite, salt and vanilla extract.
- Gently fold in the egg whites.
- Scoop 2 tablespoon sized mounds onto baking sheets, spread 2 inches a part.
- Bake on center rack of the oven for 16 minutes, checking at 14 until golden.
- Fr an extra level of decadence, warm a few additional tablespoons of doce de leite in the microwave for 20 seconds and drizzle on top.
