Growing up, my parents used to make”Popeye eggs.” I would get so excited for them, as there was something very intriguing to a wide eyed six-year old about popping an egg out of a circle inside a piece of bread. I thought this was something only my family made, as it seemed so unusual, but apparently upon some research, Popeye eggs were a thing. They were made famous by several movies and TV shows from Moon over Miami in 1941, Moonstruck in 1987 and then in Friends in the 1990’s. And they might be known to you by some other silly names like “Toad in a Hole,” “Hole in One,” or “Egg in a Basket.” Basically, you melt butter, tear a hole in the center of bread. Crack and egg, let it set for a bit before placing the bread over the egg. You can either flip it over or serve it sunny side up.
As I had Cinco de Mayo on my mind, I made a version of Popeye eggs for breakfast but instead of bread I used tortillas. With a sprinkling of Chipotle pepper, some shredded Cheddar Jack cheese and cilantro I served a new interpretation of my childhood favorite.
