  1. Pre-heat the oven to 400 degrees.
  2. Line muffin tin with liners and coat with baking spray.
  3. In a medium sized mixing bowl combine flour, baking powder, salt and sugar.
  4. Whisk the oil, milk, egg and lemon zest together until combined.
  5. Add the wet mixture to the dry and mix with a wooden spoon. Do NOT over mix!
  6. Gently mix in the lemon chips.
  7. Distribute batter evenly among the muffin tin. Sprinkle with a tad bit of course white sugar.
  8. Bake on the center rack of the oven for 20 minutes. Remove and cool. Enjoy immediately or freeze.
Recipe Notes

I make muffins all the time and pretty much use the same basic recipe. Chocolate, cinnamon or banana, it’s a no fail recipe as long as you don’t over mix the batter. This version is special though since good lemon chips (or any for that matter) are nearly impossible to find. You’ll have to visit Nuts.com to get these but it’ll be worth it. These zesty little morsels are sweet, tangy and just the perfect accent to a muffin batter.
