Ingredients
- 1 stick butter softened
- 1 cup sugar
- 2 whole eggs
- 1 tsp vanilla extract
- 2 tsp orange zest
- 2 cups flour white
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup buttermilk
- 1/4 cup orange juice
- 2 cups cranberries chopped
Streusel Topping
- 1/4 cup flour white
- 4 tbsp brown sugar light brown
- 4 tbsp butter cut into diced pieces
Glaze
- 1 cup confectioners sugar
- 1 tbsp orange juice

Instructions
- Preheat the oven to 350 degrees.
- Spray mini loaf pans with baking spray.
- Using an electric mixer of Kitchen Aid, beat butter, sugar and vanilla until creamy. Add the eggs and zest. Beat well.
- In another bowl, whisk the flour, baking powder and salt together.
- Add to the wet ingredients and beat alternatively with the buttermilk and orange juice.
- Stir in the cranberries. Distribute the batter and streusel topping among desired number of pans and bake for approximately 30-35 minutes until golden and cooked through. Cool, remove from pans and if desired, drizzle glaze.
