I make muffins all the time and pretty much use the same basic recipe. Chocolate, cinnamon or banana, it's a no fail recipe as long as you don't over mix the batter. This version is special though since good lemon chips (or any for that matter) are nearly impossible to find. You'll have to visit Nuts.com to get these but it'll be worth it. These zesty little morsels are sweet, tangy and just the perfect accent to a muffin batter.
Working full time with students, food companies (and their professionals), I have the best job. I get to help my students find internships and jobs in the community, wellness and food industry. One of my favorite parts is going on site visits to food production facilities such as Nuts.com. One of my students works in quality control there and gave me a VIP tour with a bag of lemon chips to go. Now I'm hooked and will have to order these amazing little chips online from Nuts.com.

I love anything lemon! You could even put a few blueberries in the batter. Hope to see you one day!
